ANOTHER MEATLOAF

This meatloaf recipe only takes one pound of ground beef, which might be easier for college people. It tasted delicious, but didn't slice as well out of the oven. When it cooled, it sliced beautifully. Meatloaf makes good sandwiches.

BEST-EVER MEAT LOAF

2 slices rye or whole wheat bread
2 slices white bread
3/4 cup cold water
1 pound ground beef
1/2 of a onion (medium sized) finely chopped (about l/2 cup)
few sprigs of parsley chopped (or dried parsley)
1 tsp. of salt
dash of pepper
1 egg slightly beaten
3 tablespoons Parmesan cheese

Break up the bread and soak in the cold water (3/4 cup, see above). Squeeze out some of the water if bread seems too wet, and combine it with the meat. Blend thoroughly then add onion, parley, salt, pepper, egg and cheese. Shape into loaf pan. Bake for 1/2 hour. Pour off any excess grease. Spread on meatloaf topping (see other recipe). Bake another 20 minutes.

This makes a smaller meatloaf in the same size loaf pan.

I just hope we would have an oven when I come to the US. Last time in Lille it was pathetic - but at least now Travis and I we are masters of frying pan.
