2.5 lbs. fingerling potatoes (whatever fits in your dish. Don't layer too deep.)
extra virgin olive oil
your favorite herbs and spices
Rinse fingerlings, pat dry, cut into bite-sized pieces with skins intact. Toss in olive oil and sprinkle with favorite herbs. I used sage, thyme, parsley and kosher salt and pepper. Roast in a covered casserole dish at 350 degrees for 30 minutes or until tender. (I uncovered them and roasted for five more minutes to brown and crisp a few.)
You can also cook them uncovered at 400 degrees for about 20 minutes. Stir after ten minutes to loosen them from pan. This will make them crispier.
Fingerlings are small new potatoes of mixed color and variety.
