Quick and Easy Cream Biscuits

Here's an old recipe that's like my Sunday butter biscuits:

Makes eight 2 1/2 inch biscuits

2 cups unbleached all-purpose flour, plus extra for counter
2 teaspoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon table salt
1 1/2 cups heavy cream

(the heavy cream is in the place of butter or shortening)

1. Adjust oven rack to upper-middle position and heat oven to 450 degrees. Line baking sheet with parchment paper (or not. use non-stick and spray lightly)

2. Whisk together flour, sugar, baking powder, and salt in medium bowl. Stir in the cream with a wooden spoon until dough forms, about 30 seconds. Turn the dough out onto a lightly floured counter and gather into a ball. Knead the dough briefly until smooth, about 30 second. (the less you handle the dough the better. Handle lightly)

3. Shape the dough into a 3/4 inch-thick circle. Cut biscuits into rounds (with a cup) or wedges. Place rounds or wedges on cookie sheet. (the baking sheet can be wrapped in plastic wrap and refrigerated for up to two hours). Bake until gold brown, about 15 minutes, rotating baking sheet halfway through baking.

Apartment ovens can vary in temperature. The best way to check temperature is to make cookies or these biscuits would be a good check of temperature. Adjust heat or length of cooking time next time.

Notice how the big toe on my left foot seems a little... crooked? It was snapped completely in half and bent to the left. Good fun, eh?

News From Utah

September 23, 2008

Tomorrow is Dawn's birthday. She and Tyler have the day off. It's been an exciting and eventful year and we wish her a very happy birthday. I've been able to tend Laurel a bit lately. She is so fun. She likes noise and people and calms down when there is a lot going on. Dawn and Tyler have done a wonderful job as parents.

Sunday night Alex had the misfortune to break his big toe. It was sort of dangling and twisted to the side. He went to Instacare Monday in Orem. They x-rayed it and said it was broken, and also that they couldn't set it. (why? I watch MASH. I don't get why they couldn't set it.) Anyway. Today he went to the orthopedist they referred him to. Seems simple, only it wasn't. His phone died. Someone parked behind him and trapped his car in the driveway. He tried to push it (a door was unlocked) and hurt his toe(s.) Out of desperation, he sat inside and tried to start it. It started without a key, and he moved it. (no explanation.) He found the clinic which ended up being a huge sports hospital. There was no parking. He parked on the next block and made it to the front entrance. He was informed by someone there that his doctor was on the other side of the building. He walked there. And found out they were exactly wrong. Later the same day he made it to the doctor's office. The doctor took an xray and said he had two broken toes. He numbed them and set the big one, taped them. I can't even imagine trying the push that car with broken toes. I'd say call him and wish him well, but there's that dead phone thing. Email if you get a chance. Alex says at least he has three good toes left on that foot.

Tommy flew to New York City on Sunday. He comes back this Sunday. I can't wait to hear about it. We took a carload of his friends to the airport on Saturday. I think we pick them up on Sunday. They are all staying in New Jersey in a house that apparently can easily accomodate them all.

Travis and Agata have probably started school. I loved the summer break and the time to see them and talk to them. I'm sure they will be very busy this Fall.

Danny and Jenni run the marathon is a couple of weeks. Good luck! I wonder if they will keep running.

Dad and I have enjoyed our summer. The garden has produced many many tomatoes. I meant to send green ones home with Agata. We have five or six or more giant warty pumpkins. The garden is a miracle we enjoy each year.

Happy birthday to Dawn! Many of my good memories of this last year include Dawn and the events surrounding Laurel's birth. We have enjoyed meeting her parents and visiting with them.
We are so glad to have her in our family.

Hi From Home

July 13, 2008

All is well here. Tyler and Dawn are enjoying baby Laurel. They aren't getting all that much sleep, but they love her. Dawn's Dad, George, and his wife, Sherrie, are visiting this week. They are staying in Park City. We will hopefully see them this week.

Alex is into his last month in the Thailand Mission. I'm sure it's not his last month in Thailand. He will probably visit it many times. We look forward to seeing him again. Tommy and his friends are coming to dinner today. If all else fails, we do have a crop of raspberries in the garden. I'm trying a new recipe from the newspaper for a top ramen salad. Apparently there are whole restaurants devoted to ramen now. This is a spinach salad with oriental dressing and crunchy fried noodles. We'll see.

We all hope Jenni and the boys are doing well. Where are Travis and Agata? Maybe he's on his way to the University. Danny is busy with deadlines at work. I think he flies to Salt Lake on Wednesday.

Last Sunday and Monday were unforgettable. We are grateful for Laurel and Dawn's safe journey. Write and tell me what you are doing, or call. We love you all.

No News Is Just No News

No baby yet. We could have driven to New York City and back. Jenni watch out. Nobody will take you seriously next time. Tyler and Dawn are going to the doctor at 3:00 p.m. Maybe she is in silent labor and he will admit her and deliver immediately. We are going to meet her parents tonight and have Chinese food. I'm looking forward to that. Tomorrow is a barbecue at Kaslikowski's. I'm making Cuban black beans and we will undoubtedly grill something. And eat watermelon. I love good watermelon.

Travis has left for Europe. He has a layover (one hour) in Amsterdam, then on to Poland. I think Agata has probably left for Poland after spending one week in England. Jenni is packing up for camp. Danny is working every minute so that he can drive her and the boys. Tommy is enjoying summer at BYU and working at the Ad Lab (details please, Tommy) Alex has a new companion and a birthday coming on the tenth of July.

I'm taking yoga classes in Draper. Didn't know I was so out of shape. Dennis is busy and happy at work. Things are going pretty well there. His department has proven to be very valuable. We worked so hard on the yard and the flower beds, and now the intense heat is blasting everything. I'm a little tired of hearing about saving gas and water. I think we could water everyday. I just want to say that I remember this recession and the green trend in the late 70's and early 80's. Maybe the two go together. I thought it was serious then, but it appears to be a pattern. Followed by big hair and shoulder pads and loud shirts. Excess follows denial. Maybe. We'll see. I read an article in the paper on "hyper-miling", the game of saving gas. Hyper-milers drive 65 mph or less, and do a lot of coasting to stops and into driveways. They can up their mph by about 5mph by driving this way.

School picture, 4th grade I think, and baby shot. He always looked like he was up to somethin'. Below is a photo of Tommy and Travis. I finally figured out the only way to take a studio photo of Travis was to have Tommy in the picture. Travis' face is proof that learning to walk is dangerous.
